Is it possible to encrypt our e-mail content?

We need to forward sensitive data encrypted end to end. How does this work here? Using S/MIME?

Which certificates can we put in place to encrypt the sensitive data?

Unfortunately no, the service supports transport level encrpytion using HTTPS. But application level end to end encryption is not available as of now.

End to end encryption using S/MIME or PGP is not supported by Sinch E-Mail 365.
